John Wayne Casserole

INGREDIENTS

  • 2 pounds ground chuck cooked and draineda2ee6aa6eddb751216cdcdb15e892f67
  • 1 (1.25 ounce) packet taco seasoning
  • 4 ounces sour cream
  • 4 ounces mayonnaise
  • 8 ounces shredded cheese (divided)
  • 1 small sweet onion
  • 2 cups Bisquick
  • 2/3 c milk
  • 2 roma tomatoes chopped
  • ½ green bell pepper chopped
  • 2 ounces (1/2 can) chopped jalapeno peppers

DIRECTIONS

  1. Heat oven to 325.
  2. Brown ground chuck and add taco seasoning and water according to package directions. Set aside.
  3. In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese and half of the onion, set aside.
  4. Stir Bisquick mix and milk to form dough.
  5. Press into a greased 9 x 13 greased baking dish on the bottom and up the side of the pan.
  6. Saute remaining onions and green peppers until soft.
  7. On top of Bisquick mix layer as follows: ground beef, tomatoes, green peppers and onion mix, jalapeno peppers, spread sour cream mixture evenly over the top, (like frosting a cake), top with remaining cheddar cheese.
  8. Bake for 30-40 minutes or until edges of dough are lightly browned.
