Roasted Chicken

When I was a kid, I can remember my mom cooking up whole chickens and cutting them up for casseroles, soups, and stews. This is my version of roasted chicken. You can use this for all kinds of dishes. Cooked chicken will last for 3 days in your fridge.

INGREDIENTS

  • 4 whole chicken breasts, cut into halves3558950db4d50b640c4c1dc69510d775
  • olive oil
  • sea salt
  • cracked black pepper

DIRECTIONS

  1. Coat with olive oil, and season with sea salt and cracked black pepper.
  2. Cook uncovered in 375 degree oven for 45 minutes, then turn on broiler for 10 minutes longer.
  3. The olive oil will create a nice crispy outside (without the fat of the skin) while sealing in all the juices.
